Ingredients
| Rolled oats | 3/4 cup | quick oats if you want it done in three minutes |
|---|---|---|
| Dried apple slices | 1/3 cup | chop them small so they rehydrate evenly |
| Golden raisins | 2 tbsp | |
| Demerara or raw sugar | 1 1/2 tbsp | |
| Ground cinnamon | 1/2 tsp | |
| Ground ginger | 1/4 tsp | |
| Citric acid or powdered lemon | 1/8 tsp | stands in for the lemon juice |
| Salt | a pinch |
Method
- Boil 300 ml of water.
- Dump the bag in, stir once, and pull the pot off the heat.
- Cover it and wait five minutes. The apple needs that long to stop being leathery.
- Stir again. If it is stiff, add hot water a splash at a time.
This is a commercial dehydrated apple porridge rebuilt from parts you can buy in a grocery store. The original bakes fresh apple slices before drying them, which you cannot do on trail and do not need to: store-bought dried apple rehydrates into the same soft, sweet pieces once it sits in hot water long enough.
The five-minute rest off the stove is the whole recipe. Oats hydrate fast, dried fruit does not, and if you eat immediately you get soft oats around chewy apple. Citric acid replaces the lemon; it keeps the sugar and raisins from going flat, and it weighs nothing.
Packing
Everything goes in one bag at home. If you want to eat out of the bag instead of the pot, use a freezer bag and insulate it in a spare sock while it sits.
Variations
- A tablespoon of powdered coconut milk makes it richer without adding a cold-chain problem.
- Skip the sugar and add it at camp if you would rather control sweetness by mood.
