Ingredients

Dried tart apples 1 1/2 cups granny smith rings, chopped small
Flour tortillas 4 small stand in for thin pastry sheets
Sugar 3 tbsp
Cinnamon 1 tsp
Semolina or fine breadcrumbs 2 tbsp soaks up the juice
Oil 2 tbsp for brushing the outsides
Salt a pinch

Method

  1. Put the dried apples in the pot with 180 ml of boiling water. Cover and let them sit ten minutes until they plump up.
  2. Drain off any standing liquid. Stir in the sugar, cinnamon, semolina, and salt. Let it stand two minutes so the semolina takes on the juice.
  3. Spoon a quarter of the filling onto half of each tortilla. Fold over and press the edge down hard with the back of a spoon.
  4. Brush both sides with oil. Lay them on a grate over coals, not flame, about three minutes a side until they blister and brown.
  5. Let them cool a few minutes. The filling holds heat much longer than the outside does.

The original is a lenten pie built on thin pastry sheets and fresh sour apples. Neither travels. Dried tart apple rings rehydrate in ten minutes and come back with the acidity intact, which is the whole point of using sour apples in the first place. Flour tortillas do the job of the pastry: thin, flat, indestructible in a pack, and they crisp over coals.

The semolina is not filler. Rehydrated apple sheds water, and without something to bind it the filling runs out the seam and into the fire. Two tablespoons is enough to hold it together without making it pasty. Coals, not flame — a tortilla goes from brown to carbon in under a minute over open fire.

Packing

Chopped apples, sugar, cinnamon, semolina, and salt go in one bag together at home. Tortillas stay flat against the back panel of the pack or they arrive folded.

Variations

  • Raisins or dried cranberries in place of a third of the apples.
  • A fry pan with a lid works if you have no grate. Same time, lower heat.
  • Skip the fire and eat the filling straight out of the pot as a hot apple mash.
