Ingredients

Avocado 1 whole firm-ripe, not soft, or it collapses
Smoked bacon 2 rashers
Egg 1
Black sesame seeds a pinch
Salt and black pepper a pinch each
Chili flakes a small pinch

Method

  1. Set a skillet on the grate or stove over medium heat. Lay in the bacon and cook until it stiffens, about four minutes, turning once.
  2. Move the bacon to the lid of your pot. Leave the fat in the pan.
  3. Crack the egg into the hot fat. Cook until the white sets, two or three minutes. Break the yolk if you would rather not wear it.
  4. Halve the avocado, twist it apart, and lift out the stone with the spoon you are about to eat with. Peel the skin off both halves.
  5. Stack it: one avocado half cut side up, bacon folded on top, then the egg, then the second half cut side down.
  6. Season the top with salt, pepper, chili flakes, and sesame seeds. Eat it standing up.

This is a car-camping breakfast, not a trail one. Avocado, bacon, and an egg all need a cooler and none of them survive a week in a pack, so this is a first-morning meal at the trailhead or a basecamp day.

The reason it works is the fat. An avocado half is most of a stick of butter’s worth of energy, and it digests slowly, which is the opposite of what a pastry does to you before a climb. The bacon fat also does double duty: it is the cooking medium for the egg, so there is no oil bottle and only one pan to wipe out. Firmness matters more than ripeness here. A soft avocado turns to paste under the egg and you end up eating it with a spoon.

Packing

Avocado goes in the cooler or in a rigid container in the top of the pack. It bruises against anything hard. Bacon and the egg need a cooler and should be cooked the first morning out.

Variations

  • Cook the bacon down to fully crisp and crumble it instead of laying it flat. The stack holds together better.
  • No egg on hand: two more rashers of bacon and a squeeze of lime on the avocado.
  • Cooking for two, use one avocado each. Half an avocado is a garnish, not a breakfast.
