Ingredients

Method
- Pour 180 ml of water into the pot and bring it to a boil. Drop in the broccoli, take it off the heat, and let it sit two minutes.
- Whisk the egg powder, milk powder, cheddar, chives, salt, and pepper into the pot until there are no dry lumps. Do this off the flame or you get scrambled edges and raw middle.
- Add the oil and put the pot back on the lowest flame you can hold.
- Stir constantly for three to four minutes. It goes from soup to curds fast, and it will keep cooking after you kill the heat.
- Fold in the bacon crumbles and eat straight from the pot.
A quiche is eggs, cream, and fat set slowly in an oven. On trail you have none of that: no oven, no crust, no fridge. What survives the translation is the filling, and the filling was always the point. Egg powder plus milk powder rebuilds the custard closely enough, and scrambling it in a pot gets you there in seven minutes instead of fifty.
The order matters more than the ingredients. Broccoli goes in first because freeze-dried florets need real hot water to soften, and if you add them to eggs already setting they stay squeaky. Everything else goes in off the heat so the powder actually dissolves. Bacon goes in last and unheated — it is already cooked, and stirring it through hot eggs is all the warming it needs.
Packing
Egg powder, milk powder, cheddar, chives, salt, and pepper premixed in one bag at home. Broccoli in a second bag so it stays crisp, bacon in a third so the grease stays put. Oil in a dropper bottle.
Variations
- Skip the bacon and the cheddar and it is a vegan-adjacent problem you have not solved. Skip the bacon alone and it is a plain broccoli cheddar scramble.
- A tortilla on the side turns it into a breakfast burrito and adds 150 calories.
- Hot sauce packets do more for this than more salt does.
