Ingredients

Boneless chicken thigh 1 1/4 lb thigh stays juicier than breast over a fire
Bacon 8 slices
Couscous 1 1/3 cups dry
Olive oil 2 tbsp
Salt, pepper, paprika, garlic powder to taste
Wooden skewers 8 soak them in water first

Method

  1. Cut the chicken into large cubes and toss them with oil and the seasonings.
  2. Wrap each cube in a half slice of bacon and thread them onto soaked skewers, leaving a little space between pieces.
  3. Boil 250 ml of water, stir in an equal volume of couscous, cover it, and leave it off the heat for five minutes.
  4. Cook the skewers over the grate, turning every few minutes, until the bacon crisps and the chicken is cooked through, fifteen to twenty minutes.
  5. Fluff the couscous with a fork and lay the skewers on top.

Couscous is the reason this works at camp. It asks for equal parts boiling water and five minutes under a lid, so the whole starch problem is solved while the skewers are still cooking.

Space the pieces on the skewer. Packed tight, the bacon between them steams instead of crisping and the middle cubes stay pale.

Packing

Season and skewer at home and the camp job is one pot and one grate. Keep the raw skewers on the bottom of the cooler in a sealed box.

Variations

  • Peppers and onion between the chicken pieces, though they cook faster than the meat.
  • Stir dried fruit and a squeeze of lemon into the couscous while it steams.
