Ingredients

Method
- An hour before you want lunch, pour about 200 ml of cold water over the dried vegetables in the bag. Seal it and let it ride upright in a side pocket.
- When the vegetables are pliable, add the hummus powder and another 100 ml of water. Work the bag with your hands until there are no dry pockets.
- Let it sit ten more minutes. The powder keeps thickening after it looks done.
- Squeeze in the oil, season, and eat straight from the bag with a long spoon.
The vegetables need the head start. Hummus powder hydrates in minutes, but dried carrot and pepper take the better part of an hour in cold water, and if you add them all at once you get a smooth paste with gravel in it. Two stages, one bag, no stove.
The oil is not optional. Instant hummus is mostly chickpea flour and sesame, which means protein and not much fat, and a lunch that leaves you hungry two miles later. A tablespoon of olive oil roughly doubles the calories and makes the texture read as hummus instead of wet powder.
Packing
Everything dry goes in one freezer-weight quart bag at home. Sandwich bags split at the seam once you start kneading them, so pay for the thicker ones. Oil rides separately.
Variations
- Add a foil packet of tuna or chicken if you want animal protein, which drops the vegan tag.
- Corn chips or rice crackers turn it from a bowl into a dip.
- A pinch of cumin and chili powder in the premix does more than salt alone.
