Method
- Tear off a large piece of foil, about 18 inches long.
- Drain the pork and add it to the foil. Break it into bite-sized pieces with your spoon.
- Sprinkle the garlic powder, onion powder, paprika, pepper, and salt over the pork. Drizzle with olive oil.
- Pour the BBQ sauce over everything and stir until the pork is coated.
- Fold the foil over the pork and crimp the edges to seal it, leaving some room for steam.
- Place the packet over medium coals or on a camp stove burner set to medium heat for 8-10 minutes, until heated through.
- Open carefully—the steam will be hot. Stir and eat straight from the foil.
Grilled pork chops don’t fit in a pack, but canned pork in a foil packet gives you the grill taste without the grill. The rub and BBQ sauce build flavor quickly and stay in the foil—the moisture doesn’t evaporate like it would over open fire.
Canned pork is lean, which is why you need the oil and sauce. The foil packet steams everything evenly and holds the moisture, something regular camp cookware struggles with. Eat straight from the foil; cleanup is throwing it away.
Packing
Bring one can of pork, pre-mixed dry spices in a small bag, and a bottle of BBQ sauce. The can itself carries the cooked pork.
Variations
- Canned chicken works just as well and is often lighter.
- If your BBQ sauce thickens as it cools, thin it with a splash of cold water while heating.
- Add 1/4 cup drained black beans to the foil for more texture and fiber.
