Ingredients

Elbow macaroni 3/4 cup dry
Beef flavored instant ramen 1 block seasoning packet is the whole sauce
Mixed dehydrated vegetables 1/3 cup peas, carrots, bell pepper, onion
Olive oil 1 tbsp dropper bottle
Dried oregano 1/2 tsp
Dried basil 1/2 tsp
Crushed red pepper 1/4 tsp

Method

  1. Bring 600 ml of water to a boil. Add the macaroni and the dehydrated vegetables at the same time.
  2. Simmer about eight minutes, stirring often so nothing welds to the bottom.
  3. Break the ramen block into the pot. Two more minutes, until it separates.
  4. Cut the heat. Most of the water should be gone. If it is still soupy, let it sit with the lid on for a minute.
  5. Stir in the seasoning packet, oregano, basil, and red pepper, then the oil last.

Macaroni alone needs a lot of water and gives back nothing but starch. The ramen block fixes both problems: it cooks in two minutes, the seasoning packet is a full beef broth base in a quarter ounce, and the noodles thicken the leftover water into sauce instead of leaving you draining a pot in the dark.

The vegetables go in with the pasta because they need the whole boil to rehydrate, and dropping them in late leaves you chewing gravel. Oil goes in off the heat, at the end. It is most of the fat in the bowl, and heat only drives the flavor off.

Packing

Macaroni, vegetables, and herbs in one bag. The ramen block and its packet go in a second bag so the block does not shatter into the pasta.

Variations

  • A foil packet of chicken or a spoon of tomato powder turns it into something closer to a pasta dinner.
  • Swap the beef packet for a chicken or miso one if you want it lighter.
