Ingredients

| Cayenne or red pepper flakes | 1/4 tsp | optional |
| Enchilada sauce powder | 2 tbsp | or a taco seasoning packet |

Method
- Put every dry ingredient except the cheese in the pot with 400 ml of water. Bring it to a boil.
- Cut the heat, lid it, and wait ten minutes. The sweet potato is the slow part; check a piece before you move on.
- Stir hard. It should be thick enough to hold a spoon track. If it is soupy, simmer it another minute with the lid off.
- Scrape the filling into a bag or bowl and wipe the pot.
- Lay a line of filling down the middle of a tortilla, add crumbled cheese, roll it tight, and set it seam down in the dry pot with the oil.
- Low heat, a few minutes a side, until the outside browns and the cheese gives up. Turn once.
The original is an oven recipe: fresh sweet potato, cream cheese, a wire rack at 425F. None of that travels. The rack is doing one job, keeping the bottoms from steaming, and a dry pot over low heat does the same thing if you leave them alone and only turn them once.
Everything perishable got swapped. Dehydrated beans and sweet potato rehydrate in the same ten minutes, so they cook in one pot with one boil. Cream cheese is gone; the filling gets its body from the beans thickening instead. Hard pepperjack replaces the grated cheese because it survives a warm pack, and it is also what glues the roll shut in place of toothpicks.
Packing
Everything dry goes in one bag, cheese and oil separate. Tortillas ride flat against the back panel of the pack or they arrive as chips.
Variations
- A foil packet of chicken stirred into the filling adds about 20 g of protein.
- Skip the rolling entirely and eat the filling with the tortillas torn in as scoops. Same dinner, no pan-frying.
