Ingredients

Blood sausage 8 oz cut into rounds or chunks; keep cold until it hits the pan
Eggplant 1 small diced
Onion 1 diced
Zucchini 1 diced
Bell pepper 1 diced
Beefsteak tomatoes 2 diced, juice and all
Garlic 1 clove chopped
Fennel seed 1 tsp
Paprika 1 tsp
Honey 1 to 2 tsp
Olive oil 2 tbsp
Salt and pepper to taste

Method

  1. Get the fire down to coals and set a skillet on the grate. You want steady medium heat, not flames.
  2. Fry the diced vegetables in olive oil in batches. Crowd the pan and they steam instead of browning. Pull each batch onto a plate as it colors.
  3. Cook the onion and garlic in the empty pan until soft and translucent.
  4. Add the fennel seed and paprika and stir for about thirty seconds, until you can smell them. Any longer and the paprika turns bitter.
  5. Return all the vegetables to the pan and stir them together.
  6. Add the sausage and fold it through. It only needs to heat and break up a little.
  7. Drizzle the honey over the top, season with salt and pepper, and let it sit on the heat two or three more minutes until the edges catch and glaze.

This is a cooler meal, not a pack meal. Blood sausage and five fresh vegetables have no shelf-stable version worth pretending about, so it belongs at a car camp or basecamp where you have a cooler and a real skillet.

The honey is the part that makes it work. Blood sausage is heavy and mineral, and a couple of teaspoons of honey caramelizing against the pan cuts through that instead of just sweetening it. Fry the vegetables in batches for the same reason: browned edges give the dish something to push against. The fennel and paprika go in dry, briefly, so the fat picks them up before the tomatoes release their liquid.

Packing

Dice everything at home into one container and it becomes a dump-and-fry meal at camp. Sausage rides in the cooler in its own bag. Carry the oil and honey in small squeeze bottles, honey in the outer pocket where it stays warm enough to pour.

Variations

  • No blood sausage nearby: a firm smoked sausage or chorizo works, though you lose the iron-heavy flavor the honey is balancing.
  • Swap in a shelf-stable canned or vacuum-packed sausage and dried vegetables rehydrated in the pan if you are away from a cooler.
  • A splash of vinegar at the end pushes it further toward sour if the honey lands too sweet.
