Ingredients

Rolled oats 1 1/2 cups old-fashioned, not quick
Powdered whole milk 1/3 cup reconstitutes into the custard
Powdered whole egg 2 tbsp stands in for 2 eggs
Maple sugar or brown sugar 3 tbsp syrup and honey leak
Coconut oil 2 tbsp solid below 76F, so it travels clean
Cinnamon 1 tsp
Nutmeg 1/4 tsp
Baking powder 1 tsp
Salt 1/2 tsp
Vanilla powder 1/2 tsp extract is alcohol and glass, skip it
Dried blueberries 1/2 cup

Method

  1. Melt the coconut oil in the pot over a low flame, then swirl it up the sides so nothing welds itself down.
  2. Pour in 300 ml of water and bring it to a bare simmer. Kill the heat.
  3. Dump the whole premix bag in and stir hard for thirty seconds. The egg powder needs to hydrate before it sets.
  4. Put the lid on and return it to the lowest flame you can hold. Ten minutes, no stirring.
  5. Cut the heat and let it sit covered another five minutes. It firms up off the stove, not on it.

Baked oatmeal is a custard that happens to be full of oats. Take away the oven and you still need the custard, so the eggs and milk come along as powder and the pot lid does the work the pan used to. Low flame and a covered pot is close enough to baking, as long as you accept a softer edge instead of a browned one.

Three swaps matter. Maple syrup and honey are heavy and they leak, so dry sugar goes in the premix instead. Coconut oil is solid at most temperatures you will carry it at and it greases the pot before anything else goes in, which is the difference between one-pot cleanup and scraping. Dried blueberries rehydrate on their own in the simmer, and unlike fresh ones they do not turn the whole pot purple.

Packing

Everything dry goes in one bag: oats, milk powder, egg powder, sugar, spices, baking powder, salt, vanilla powder, blueberries. Coconut oil rides in a small screw-top jar. Two bags feed four.

Variations

  • Dried apple and extra cinnamon instead of blueberries.
  • A scoop of vanilla protein powder for another 20 g, cut the milk powder to 1/4 cup.
  • No stove: cold-soak the same bag overnight and eat it as thick oats. It will not set.
