Method
- Unwrap a bar.
- Eat cold, or warm briefly over a fire if you have one.
Brown butter carries the toasted, nutty flavor that campfire heat would add to marshmallows, so these bars taste like s’mores at their best instead of just sugar and chocolate melting apart. Make them several days before your trip so they have time to set completely—they won’t turn gooey in your pack even on warm days.
They’re shelf-stable and durable in a way fresh baked goods aren’t, which means you get a real dessert on the trail instead of crumbs and mess. The butter preserves well and keeps the bars flavorful through a full week of backcountry travel.
Packing
Make at home by browning butter, stirring in 1 cup marshmallows until melted, folding in cereal, pressing into a greased 9x13 pan, scattering chocolate and topping marshmallows over the surface, and cooling 1-2 hours. Cut into 16 bars and wrap individually in parchment.
Variations
- Use Cinnamon Toast Crunch instead of Golden Grahams for a spiced version.
- Stir a tablespoon of peanut butter into the brown butter for more protein and richness.
- Substitute dark chocolate chips for a less sweet bar.
