Ingredients

Instant mashed potato flakes 3/4 cup
Freeze-dried broccoli florets 1/2 cup chop small so they rehydrate evenly
Cheddar cheese powder 1/4 cup the sharpest you can find
Powdered whole milk 2 tbsp
Butter powder 1 tbsp or a tablespoon of olive oil
Buffalo wing sauce 2 tbsp carried in a leakproof squeeze bottle
Salt and black pepper to taste

Method

  1. Boil 500 ml of water. Drop in the broccoli and let it sit off heat for four minutes with the lid on.
  2. Stir in the cheese powder, milk powder, and butter powder while the water is still hot. Get the lumps out now, not later.
  3. Add the potato flakes a third at a time, stirring after each. Stop when it holds a spoon.
  4. Squeeze in the buffalo sauce and stir it through. Salt and pepper, then eat.

The oven version bakes a russet for an hour and builds a roux on the side. Neither happens on a stove with one pot and a fuel budget, so the potato becomes flakes and the roux becomes powder. Cheese powder and milk powder do the same job the flour and milk were doing: body and dairy fat, without a fridge or a second pan.

Order matters more than technique. The powders go into hot water before the flakes, because once the starch sets you cannot stir a lump out. Buffalo sauce goes in last and off heat; it is mostly vinegar and it thins the whole pot if it boils.

Packing

Potato flakes, broccoli, cheese powder, milk powder, and butter powder go in one quart bag. The buffalo sauce rides in its own bottle inside a second bag, because it will find a way out.

Variations

  • A foil packet of chicken turns this into the wing-shop version.
  • Half the buffalo sauce and a spoon of ranch powder if the full hit is too much.
