Ingredients

Bread flour 2 cups
Active dry yeast 2 1/4 tsp one standard packet
Salt 1 tsp
Sugar 1 tsp
Butter 1/4 cup for the glaze
Honey 2 tbsp
Oil or butter 2 tbsp for the griddle

Method

  1. At home, put the flour, yeast, salt, and sugar in a heavy freezer bag and squeeze the air out.
  2. At camp the night before, pour in about 180 ml of warm water and knead the bag from the outside until the dough comes together and turns sticky.
  3. Leave the bag somewhere warm overnight. Inside the tent near your feet works; it needs to roughly double.
  4. In the morning, get a griddle or pan hot over the coals and slick it with oil or butter.
  5. Pinch off a quarter of the dough, flatten it into a disc, and fry it two to three minutes a side until it browns.
  6. Mash the butter and honey together and spread it on while the bread is still too hot to hold.

The whole trick is that yeast does not care where it rises. Mixing dry at home and hydrating at camp means you carry flour, not dough, and the overnight rise happens while you are asleep anyway.

Do not skip the honey butter and call it a savings. Plain fried flatbread is filler; with the glaze it is the reason people get out of the bag in the morning.

Packing

The dry mix is one bag. Butter and honey ride in a screw-top jar; premixing them at home saves a step at camp.

Variations

  • Cinnamon and sugar instead of the honey butter.
  • Press a piece of hard cheese into the disc before frying.
