Ingredients

Ground beef 1 lb 80/20, packed frozen in the cooler
Mayonnaise 1/2 cup single-serve packets keep without a cooler
French dressing 2 tbsp
Sweet relish 2 tbsp
Apple cider vinegar 1 tsp
White sugar 1 tsp
Dried minced onion 1 tsp stands in for grated fresh onion in the sauce
Yellow mustard 1 tsp plus more for the patties
Salt 1 tsp
Brioche buns 4
American cheese 4 slices processed slices sit at ambient temperature better than real cheese
Dill pickle chips 12 slices jarred, drained
White onion 1 small
Iceberg lettuce 1/4 head
Beefsteak tomato 1

Method

  1. At home, stir the mayonnaise, French dressing, relish, vinegar, sugar, dried onion, and 1 tsp mustard together in a jar. It travels fine in the cooler and does not need to stay cold to be safe for a weekend.
  2. In camp, slice the onion thin and drop the slices in a cup of cold water for ten minutes to pull the bite out. Slice the tomato, tear the lettuce.
  3. Divide the beef into four loose balls. Do not pack them tight.
  4. Set a cast iron pan or flat griddle on the grill grate over hot coals. Let it get hot enough that a drop of water skates.
  5. Put a ball in the pan and press it flat with a spatula for ten seconds. Salt it, then leave it alone for two to three minutes until the edge goes brown and lacy.
  6. Flip once. Smear a little mustard on the cooked side, lay on a cheese slice, and give it another 90 seconds.
  7. Pull the patties and dry-toast the bun halves cut side down in the same pan. Thirty seconds is enough.
  8. Build: sauce on both buns, pickles, onion, lettuce, tomato, patty. Eat standing up.

This is a fast food burger rebuilt for a fire ring. The technique that matters is the smash: a loose ball pressed hard onto very hot cast iron for the first ten seconds, then untouched. That contact makes the browned crust, and the crust is most of the flavor. A patty formed at home and carried as a puck will never get there.

The sauce is the other half. Mayonnaise, French dressing, relish, vinegar, and sugar mixed at home keeps in a jar through a weekend, and dried minced onion replaces the grated fresh onion so nothing wilts in the pack. American cheese is not a compromise here — it melts at a lower temperature than real cheddar, which matters when the patty comes off the grate in 90 seconds.

Packing

Sauce goes in a small screw-top jar, mixed at home. Beef stays frozen in the cooler and thaws by dinner on day one. Buns ride on top of the pack or they arrive as crackers.

Variations

  • No cooler: swap the beef for two pouches of shelf-stable summer sausage sliced thick and seared. Not the same burger, but it browns.
  • Mayo packets and shelf-stable cheese singles make the whole build cooler-free except the meat.
