Ingredients

Ice cream 1 pint vanilla or berry; whatever survives the drive
Meringue cookies 12 small store-bought kisses, or bake your own
Fresh berries 2 cups strawberries, raspberries, blueberries
Dark chocolate 1/2 oz optional, for grating over the top

Method

  1. Pull the ice cream out of the cooler and let it sit about 10 minutes. It should scoop, not pour.

This is Eton mess with ice cream standing in for whipped cream, which is the whole reason it works away from a kitchen. Whipping cream at a campsite is a chore and fresh cream is a cooler risk. Ice cream is already whipped, already sweet, and already frozen, so it doubles as cooler ballast on the way in.

The meringues are structure, not decoration. They stay crisp for the first minute and then dissolve into the melt, which is what turns three separate things into one dessert. Assemble right before eating — a mess that sits gets soupy, and the berries are the only thing holding acidity against all that sugar.

Packing

Meringues are the fragile part. Pack them in a rigid container, not a bag, and keep them out of the cooler entirely — humidity turns them to glue. Berries go in a hard-sided box so they do not get crushed under the ice.

Variations

  • Warm the berries in a pan over the stove for a minute first, so they bleed juice into the cold ice cream.
  • Swap the meringues for crushed shortbread if yours arrived as dust anyway.
