Ingredients

Freeze-dried whole egg 2/3 cup powder whole egg, not egg white, or it comes out flat
Freeze-dried cooked sausage crumbles 1/2 cup
Dried bell peppers 1/4 cup red and green, diced small
Dried onion flakes 1 tbsp
Salt and black pepper to taste
Olive oil 1 tbsp optional, pushes the calories up

Method

  1. Bring 480 ml of water to a boil.
  2. Dump everything dry into the pot at once and stir until there are no powder pockets left.
  3. Cover and pull it off the flame. Wait ten minutes without stirring.
  4. Stir again. If it is still soupy, put it back on low heat for a minute and keep the spoon moving so the eggs do not scorch.
  5. Pour the oil over the top and season.

Freeze-dried egg is the whole reason this works. Real eggs are fragile, heavy for the calories, and go bad in a pack; the powdered version rehydrates into something with actual curd if you give it a full ten minutes off the heat instead of stirring it over the flame. Stirring while it cooks turns egg into rubber, so the rest is not optional.

The sausage and peppers do double duty. Sausage carries the fat and most of the twenty-odd grams of protein per serving, and the peppers put back some texture that egg powder alone does not have. Two servings out of one pouch is honest for a rest day, but if you are moving hard, eat the whole thing and count it as one meal.

Packing

One quart freezer bag holds the whole mix. Portion the peppers and sausage into the egg powder at home so camp is a single pour.

Variations

  • Crumble in an ounce of hard cheese while it is still hot.
  • Fold the finished eggs into a tortilla and eat it walking.
  • Half the water and a longer rest gives you something closer to scrambled than to soft.
