Ingredients

Method
- Set out both mugs, the spoon, and the pot before you light anything. This moves fast at the end.
- Put 2 cups of water in a small heavy pot with the coffee, sugar, and spices. Stir once to wet the grounds.
- Bring it up on low heat. Do not walk away and do not stir again once it starts to darken.
- When the foam climbs toward the rim, pull the pot off the flame and let it drop. Return it and let it rise a second time, then take it off for good.
- Spoon a little foam into each mug, then pour slowly and steadily so the grounds stay behind.
- Let the mugs sit a minute before drinking. Drink from the top and leave the sludge at the bottom.
This is a boil-in-the-pot coffee, which is the point of carrying it. Everything goes in cold together, comes up together, and the grounds settle out in the mug instead of in a filter you have to pack out wet. The only gear is a pot you already have.
Low heat matters more than anything else here. Coffee brought up slowly foams once, gently, and that foam is what holds the aroma; rushed on a wide-open burner it just boils over and tastes scorched. A narrow, heavy-bottomed pot climbs faster than you expect, so stand there with your hand on the handle.
Packing
Measure the coffee, sugar, and spices into one small sealed jar at home. At camp it is one pour into the pot instead of four small measurements in the dark.
Variations
- Skip the sugar and add it to the mug instead if you are sharing with someone who takes it black.
- A strip of orange peel dropped in during the heat-up reads well with the cardamom.
- No spices at all still works. The method is what makes it, not the cardamom.
