Ingredients

Dehydrated hash brown potatoes 1 1/2 cups the shelf-stable carton kind, not frozen tots
Whole egg powder 6 tbsp equals about 4 eggs
Shelf-stable cooked sausage crumbles 3 oz freeze-dried or a vacuum-sealed summer sausage, diced
Real bacon bits 2 tbsp
Powdered cheddar cheese 3 tbsp
Dried minced onion 1 tbsp
Oil or ghee 2 tbsp
Salt, pepper, smoked paprika 1 tsp total
Hot sauce to taste optional, packets

Method

  1. Put the hash browns and dried onion in the pot with 300 ml of boiled water. Cover and let them sit off heat for 10 minutes until they soften.
  2. Whisk the egg powder into 50 ml of cool water in a mug or bag until there are no lumps. Do this while the potatoes rehydrate.
  3. Drain off any standing water. Add the oil and set the pot back over medium heat. Fry the potatoes flat, undisturbed, about 5 minutes, until the bottom browns.
  4. Stir in the sausage and bacon, then pour the egg over everything. Fold slowly until the egg sets. Take it off the heat while it still looks slightly wet.
  5. Sprinkle the cheese powder over the top and stir once. Season and add hot sauce.

The original is a casserole: frozen tots, raw eggs, cheese, an oven, and 45 minutes. None of that travels. Dehydrated hash browns and egg powder do the same two jobs at a fraction of the weight, and both go in dry, so nothing has to stay cold overnight.

The order matters more than the ingredients. Potatoes rehydrate first and get fried before the egg goes in, because egg cooks in under a minute and potatoes that went in wet stay mushy. Cheese powder goes on last off the heat; over direct flame it scorches and turns grainy.

Packing

Hash browns, onion, and seasoning in one bag. Egg powder in its own bag so it stays dry. Meat and cheese powder in a third. Oil in a leakproof bottle.

Variations

  • Skip the meat and double the potatoes for a cheaper vegetarian pan.
  • Freeze-dried bell pepper and a packet of salsa turn it into a hash.
  • In a dutch oven, press it flat and bake with coals on the lid for 15 minutes to get a crust.
