Ingredients

Freeze-dried diced chicken 1 cup
Dried potato slices 1 cup cut into bite-sized pieces
Freeze-dried peas 1/3 cup
Dehydrated carrot 1/3 cup diced small
Freeze-dried onions 1/2 cup crumbled
Chicken gravy mix 1 packet 1.2 oz packet
Butter powder 1 tbsp
Dry milk powder 1.5 tsp
Dried parsley 1 tbsp
Black pepper 1/2 tsp
Salt to taste

Method

  1. At home, combine all dry ingredients in a quart jar or mylar bag. An oxygen absorber extends shelf life.
  2. At camp, measure 1400 ml of water into a large pot.
  3. Bring water to a boil, then pour in the entire mix while stirring continuously to break up clumps.
  4. Reduce heat to medium-low and simmer for 10–12 minutes, stirring occasionally, until potatoes soften and the broth thickens.
  5. Taste and adjust salt. Serve hot.

Freeze-dried protein and vegetables solve the weight and shelf-life problem. Everything here carries for months without refrigeration and rehydrates completely in simmering broth. The chicken gravy mix does the heavy lifting: it thickens the soup and seasons it all at once, so you’re not carrying a spice cabinet.

Butter powder and milk powder matter more than they sound. They create the creamy flavor you expect from pot pie soup without requiring cream at camp. Stir constantly as you add the dry mix to avoid lumps—once it’s in the hot water, lumps won’t break down. This feeds four people in one pot with no dishes after.

Packing

All dry ingredients go in a single quart jar or mylar bag at home. At camp, you have one bag to open and one pot to use.

Variations

  • Add a tablespoon of vinegar or lemon juice powder to brighten the broth.
  • Stir in a tablespoon of heavy cream powder in the last minute of cooking for extra richness.
  • A pinch of fresh thyme or sage, if you carry it, lifts the whole thing.
