Method
- Start the rice in a second pot if you are serving it. It cooks unattended while the chili comes together.
- Heat the oil in the big pot. Add the onion, garlic, paprika, and cumin and stir for two or three minutes over medium heat.
- Add the dry soy crumble and stir it around in the oil for a minute so it picks up the spice.
- Pour in the sugar, crushed tomatoes, crumbled stock cubes, and 200 ml of water. Simmer until the soy has swelled and gone soft, about ten minutes.
- Tip in both cans of beans, the white ones with their sauce. Season with oregano, pepper, and salt.
- Simmer another ten minutes, stirring so the bottom does not catch. Serve over rice with corn chips crushed on top.
This is group food. Ten people, two pots, one long simmer, and almost all of it comes out of cans and jars. The soy crumble goes in dry and rehydrates in the tomato instead of in plain water, which is the whole point: it drinks the stock and spice rather than diluting them.
The sugar is not there to sweeten it. Canned tomato is sharp, and two tablespoons flattens that out so the cumin and paprika read. Corn chips are the last ingredient because they are the only crunch in the pot, and they keep the whole thing gluten-free as long as you check the bag.
Packing
Onions and garlic ride whole and unrefrigerated. Premix the paprika, cumin, oregano, pepper, and crumbled stock cubes into one jar at home so seasoning is one pour in camp. Keep the chips on top of the pack or you arrive with corn dust.
Variations
- Chipotle powder or a squeeze of hot sauce if the group wants heat.
- Skip the rice and eat it straight with chips. Nobody complains.
- Swap the white beans in sauce for plain ones and add a spoonful of tomato paste.
