Ingredients

Method
- Set a skillet over moderate heat. Melt the butter, then add the apple slices, sugar, and cinnamon.
- Cook 5 to 8 minutes, turning once or twice, until the slices go soft at the edges but still hold together. Slide them onto a plate.
- Wipe the pan, lay the bread pieces in dry, and toast both sides until they stiffen.
- Top each piece with brie and a slice or two of apple. Cover the pan with a lid or foil and hold it over low heat for 2 minutes, until the cheese slumps.
- Serve straight out of the pan. Brie firms up fast once it cools.
This is an oven appetizer moved onto a single skillet. The oven step exists only to melt cheese and crisp bread, and a covered pan over low heat does both. Cooking the apples first matters: raw slices on toast stay crunchy and watery, while a few minutes in butter and sugar drives off moisture and softens them enough to eat in one bite.
Brie needs a cooler, so this is a car-camping or basecamp dish, not something to carry on day three. Keep it cold until the pan is ready — soft brie smears rather than slices, and it will find its way into everything in the bin.
Packing
Brie and butter live in the cooler and stay there until the pan is hot. Bread rides in a hard container or it arrives as crumbs. Pre-mix the sugar and cinnamon in a film canister so you are not opening two spice jars in the wind.
Variations
- No cooler? Swap the brie for a wedge of firm cheese and the butter for oil. It stops being brie but it still works.
- Whole apples travel better than sliced ones. Slice at camp with a pocket knife.
- A drizzle of honey over the melted cheese if you carry honey. Drops the vegan claim, which this never had anyway.
