Ingredients

Rolled oats 1 cup old-fashioned, ground to a coarse flour at home
Baking powder 1 1/2 tsp
Ground cinnamon 1 tsp
Salt 1/4 tsp
Powdered whole egg 2 tbsp stands in for 1 egg
Powdered milk 2 tbsp optional, adds browning
Ghee 2 tbsp shelf-stable, splits between batter and pan
Maple syrup 2 tbsp a small bottle, or maple sugar to save weight
Molasses 1 tsp optional, for depth

Method

  1. Melt about half the ghee in the pot over low heat, then pour it off into your cup to cool a minute.
  2. Add 180 ml cold water, the melted ghee, the syrup, and the molasses to the dry mix in its bag. Squeeze out the air, seal, and knead until no dry pockets remain.
  3. Let the bag sit five minutes. The ground oats need that time to drink or the middles stay gritty.
  4. Wipe the pot with the rest of the ghee and set it over the lowest flame you can hold.
  5. Spoon in cakes about three inches across. Cover with a lid or foil. Three to four minutes until the tops look dry and set.
  6. Flip and give them two more minutes. Cook them hot and they burn before the center does anything.

A waffle iron is not going in a pack, so this keeps the batter and drops the appliance. Ground rolled oats are the whole flour here, which means the batter behaves differently from wheat: it thickens as it stands and it will not tolerate a hot pan. Low heat and a lid, every time.

The swaps are the fridge items. Powdered egg and powdered milk rehydrate in the bag with the water, and ghee replaces butter because it keeps for weeks without cooling and has no water to spit. Maple sugar in place of syrup cuts a few ounces if you care about that.

Packing

Ground oats, baking powder, cinnamon, salt, egg powder, and milk powder go in one freezer bag at home. Ghee in a small screw-top jar, syrup in a leakproof dropper bottle. Mix in the bag and there is nothing to wash but the pot.

Variations

  • Swap the syrup for 2 tbsp maple sugar in the dry mix and carry no liquid sweetener at all.
  • Leave out the egg and milk powders and add 1 tbsp ground flax for a vegan version. They hold together less well.
  • Dried apple bits stirred in after the rest turns it into something closer to a fritter.
