Ingredients
| Self-rising flour | 2 cups | or plain flour with 1 tbsp baking powder and 1 tsp salt |
|---|---|---|
| Powdered shortening or shelf-stable butter powder | 1/3 cup | cuts in without a fridge |
| Powdered whole milk | 3 tbsp | mixed into the dry flour at home |
| Cold water | 3/4 cup | add slowly, the dough drinks less than you expect |
| Sugar | 1/3 cup | |
| Ground cinnamon | 1 tbsp | |
| Oil or ghee | 1 tbsp | for greasing the pan |
Method
- Build a bed of coals and set nine or ten briquette-sized chunks aside for the lid. You want steady heat, not flame.
- Pour the dry biscuit mix into your pot and add water a few tablespoons at a time. Stir until it holds together and stop. Overworked dough bakes into a rock.
- Shake the sugar and cinnamon together in a bag.
- Pull off nine lumps of dough, roll each into a rope about six inches long, then twist it back on itself. Drop each twist into the cinnamon sugar bag and shake to coat.
- Grease the dutch oven and lay the twists in with a finger of space between them.
- Lid on, most of the coals on top and a thin ring underneath. Bake 10 to 12 minutes. Check at 8 if the coals are hot.
- They are done when the tops are set and the bottoms have colored. Pull them out of the pan right away or the sugar welds them in.
This started as a home biscuit recipe, which means fridge butter and fresh milk. Both are swapped here: powdered shortening cuts into flour dry and rehydrates when the water goes in, and milk powder mixed into the flour at home means one bag and one pour at camp.
Heat placement is the whole game with a dutch oven. Most of the coals belong on the lid so the tops set before the sugar on the bottom scorches. A thin ring underneath is enough. The twisting is not decoration either — it opens up the surface so more of each piece gets coated.
Packing
Combine flour, powdered shortening, milk powder, and leavening in one bag at home. Cinnamon sugar goes in its own small bag and doubles as a coating and a dusting.
Variations
- Fry them in an inch of oil in a skillet instead of baking, two minutes a side.
- A spoonful of powdered milk and water whisked with sugar makes a thin glaze to drizzle over.
