Cloudberry Cream with Krumkaker

Ingredients
| Powdered coconut milk | 4 tbsp | the high-fat kind, not coconut water powder |

| Krumkaker | 2 cones | pizzelle or rolled waffle cookies work the same |
Method
- Crush the freeze-dried berries in the bag with your thumb. Leave some pieces whole.
- Add 60 ml of cold water to the powder bag a splash at a time, stirring after each. Stop when it holds a spoon shape.
- Let it sit five minutes. The coconut powder needs that long to stop tasting chalky.
- Spoon the cream into the cones one bite at a time and eat immediately. They go soft fast.
The original is ice cream in a cone, which is not a thing you can carry. What survives the translation is the actual structure: something rich and cold against something tart, scooped into something crisp. Powdered coconut milk hydrated with as little water as it will take gives you the fat and the body without a cooler, and it whips up thicker cold than warm.
Freeze-dried berries do the work the fruit did. They rehydrate on contact with the cream, so the tartness stays sharp and localized instead of bleeding out into a uniform pink. Add the water slowly. Overshoot it and you have a drink, and there is no way back.
Packing
Coconut powder, sugar, vanilla, and salt premixed in one small bag; berries in their own bag so they stay crisp. The cones ride in a rigid container or they arrive as crumbs.
Variations
- Skip the cones and eat the cream off dried apple rings.
- A splash of aquavit or brandy in the water, if you are carrying any.
