Ingredients
| Dried shredded carrots | 3/4 cup | dehydrate grated carrots at home, or buy them dried |

| Raisins | 1/4 cup | golden raisins or dried cranberries work the same |
| Dried pineapple | 2 tbsp | chopped small so it soaks evenly |
| Mayonnaise packets | 2 packets | about 2 tbsp, the shelf-stable takeout kind |
| Granulated sugar | 1 tsp | |
| Salt | a pinch |
Method
- Put the carrots, raisins, pineapple, sugar, and salt in a jar or freezer bag.
- Add 180 ml of cold water. Seal and shake.
- Leave it at least an hour. Two is better. Shake it again whenever you think of it.
- Pour off any water that did not get absorbed.
- Squeeze in the mayo packets and stir until everything is coated. Eat from the bag.
This is the potluck carrot salad, minus the grater and the refrigerator. Fresh carrots are mostly water, so drying them at home cuts the carry weight by roughly nine tenths and turns the soak into the whole method. The raisins and pineapple rehydrate on the same clock, and the sugar they give up ends up in the dressing.
Mayonnaise packets are the part people doubt. They are pasteurized, acidic, and sealed, and they hold fine in a pack for a few days. Add them at the end, after you drain, or the dressing thins out into soup.
Packing
Dry ingredients premixed in one bag. Mayo packets go in a side pocket so a burst one does not soak the carrots.
Variations
- Swap the mayo for a tablespoon of olive oil and a squeeze of lemon powder if you want it lighter.
- Soak in reconstituted pineapple juice powder instead of plain water.
