Ingredients
| Hard cookies | 200 g | gingersnaps, biscotti, or any dry cookie that snaps |

| Freeze-dried blackberries | 1 cup | stands in for the frozen berries |
| Sugar | 1 tbsp | |
| Star anise | 1 pod | optional, pull it out before serving |
| Powdered whole milk yogurt | 1/2 cup | vanilla flavored if you can find it |
| Vanilla extract or vanilla sugar | 1/2 tsp | skip if the yogurt powder is already vanilla |
Method
- Crush the cookies in their bag with a pot or a rock. Leave some pieces coarse.
- In a mug or bottle, whisk the yogurt powder into 120 ml of cold water. Add the vanilla. Set it aside to thicken.
- Put the blackberries, sugar, star anise, and 80 ml of water in the pot. Heat until the berries swell and the sugar dissolves, about three minutes. Do not boil it dry.
- Fish out the star anise.
- Layer cookie crumbs, yogurt, and warm berries in two mugs. Eat before the crumbs go soft.
This is a Norwegian leftover-cookie dessert reworked for a pack. The original leans on frozen berries and a tub of vanilla quark, neither of which travels. Freeze-dried blackberries rehydrate in a few minutes of simmering and throw off the same tart syrup, and full-fat yogurt powder mixed thin gives you the soft layer without a cooler.
The layering is not decoration. Cookies go soft the moment they meet liquid, so they stay dry until the mug is assembled. Sugar and the short heat pull juice out of the berries, which is what soaks into the crumbs on the way down.
Packing
Cookie pieces in one bag, berries and sugar in another with the star anise tucked in, yogurt powder in a third. Three bags, three layers, no measuring in camp.
Variations
- Freeze-dried raspberries or blueberries work the same way.
- No stove: cold-soak the berries in the yogurt for twenty minutes and skip the heating step.
- A spoonful of milk powder in the yogurt mix makes it richer if you want the calories.
