Ingredients

Canned chickpeas 1 can (15 oz) drained; save a little liquid
Peanut butter 1/2 cup the drier natural kind works too
Brown sugar 1/3 cup packed
Powdered milk 2 tbsp replaces the splash of fresh milk
Vanilla extract 2 tsp or 1 tsp vanilla powder
Salt 1/2 tsp
Peanut butter cups 6, chopped chop at home in cool weather
Peanut butter candies 2 oz the small coated ones hold shape

Method

  1. Drain the chickpeas. Rinse them if you have water to spare, otherwise just tip the liquid out.
  2. Put the chickpeas in a heavy freezer bag with the peanut butter, brown sugar, powdered milk, vanilla, and salt.
  3. Press the air out, seal, and work the bag with your hands until the chickpea skins break down and it goes smooth. Five minutes of steady squeezing.
  4. Add cold water a tablespoon at a time, up to about 30 ml, until it moves like thick dough rather than paste.
  5. Fold in the chopped peanut butter cups and the candies at the end so they stay whole.
  6. Eat with a spoon straight from the bag, or scoop it with pretzels or graham crackers.

The original is butter, white flour, and sugar eaten raw, which is fine at a kitchen counter and useless in a pack. Chickpeas do the same job here: mashed fine they give the dough body and a neutral base, and they bring protein instead of raw flour and its bacteria problem. Peanut butter replaces the softened butter, so nothing has to stay cold to stay workable.

Powdered milk stands in for the four tablespoons of fresh milk and thickens rather than thins, so you add water yourself and control the texture. Mixing inside the bag means no bowl, no mixer, and nothing to wash. Chop the candy at home; on a warm afternoon it will not chop, it will smear.

Packing

Sugar, powdered milk, salt, and vanilla powder premix into one small bag at home. Candy rides in a separate bag; it welds into a block if it sits against the peanut butter in the sun.

Variations

  • Swap the peanut butter cups for chocolate chips and skip the candy for a plainer version.
  • Sunflower seed butter and sunflower butter cups make it work for a nut-free group.
  • Freeze-dried chickpeas rehydrated in cold water cut nearly a pound of can weight for a backpacking trip.
