Ingredients

Garbanzo beans 1 can (15 oz) drained and rinsed well
Cashews 1/2 cup whole or pieces, both blend the same
Maple syrup 1/3 cup
Vanilla extract 1 tsp
Rolled oats 1/2 cup certified gluten-free if that matters to you
Salt 1/4 tsp
Chocolate chips 1/3 cup packed separately

Method

  1. At home, put the drained beans, cashews, maple syrup, vanilla, oats, and salt in a food processor.
  2. Run it about two minutes, scraping down the sides once. Stop when it is smooth and no grit is left.
  3. Taste and adjust the syrup and salt. This is the last chance to fix it.
  4. Pack it into a screw-top jar and chill overnight. It firms up and the raw-oat edge fades.
  5. At camp, stir in the chocolate chips and eat it with a spoon or scoop it with crackers or apple slices.

This is a home-blender job, not a camp one. The beans are the whole structure: cooked chickpeas puree into something dense and dough-like, and the cashews and oats absorb the maple syrup so it thickens instead of running. Blend it long enough and nobody guesses what is in it.

It is not shelf-stable. Canned beans with no acid and no preservative belong in a cooler, which makes this a car-camping and paddle-trip food rather than a pack food. Five days is the outside limit. Chocolate chips go in at camp because they soften and bleed if they sit in the jar.

Packing

One wide-mouth jar, filled to the shoulder so there is room to stir. Chocolate chips go in a separate small bag; mixed in early they smear and stain the whole batch. Keep the jar in the cooler and finish it inside five days.

Variations

  • Cocoa powder, two tablespoons, turns it into a chocolate version.
  • Sunflower seed butter in place of the cashews makes it nut-free.
  • For a backpacking version, skip the beans and blend a dehydrated hummus mix with oat flour and powdered maple sugar at home, then rehydrate with a little cold water at camp.
