Ingredients

Frozen shredded hash browns 2 cups they thaw in the cooler and still cook fine
Yellow onion 1/2 large diced at home
Bell peppers 3 red, orange, yellow, cut into cubes
Smoked sausage 1 large ring Mennonite farmer sausage or any fully cooked smoked ring; slice thick
Canned corn 1 can drained
Olive oil 3 tbsp
Chipotle mango seasoning 1 tbsp any sweet-and-smoky rub works
Salt and pepper to taste

Method

  1. Get the griddle or a large skillet on the grate hot enough that a drop of water skates. Spread out 1-2 tbsp of oil.
  2. Dump the hash browns down in a single layer. Dust with half the seasoning and leave them alone for a few minutes at a time so they crust instead of steaming. Push them to a cooler corner when they are golden.
  3. Add another tablespoon of oil, then the onion and peppers. Cook until they soften at the edges, salt and pepper them, and park them next to the potatoes.
  4. Lay the sausage rounds on the open hot metal. Flip once, cook both faces brown, then scatter the drained corn over them to heat through.
  5. Rake everything back together in the middle, add the rest of the seasoning, and toss. Taste for salt and serve straight off the griddle.

Camp griddles have hot spots, and this recipe uses them instead of fighting them. Each ingredient gets its own patch of metal, browns properly, and then slides to a cooler zone to wait. Crowding everything into the center at once is what turns a hash into a wet pile.

Frozen hash browns do the work of peeling and cubing potatoes at a picnic table, and they go into the cooler frozen, which buys you a few hours of ice. The sausage is fully cooked before it leaves home, so all it needs is a crust on two sides. The original was served with garlic toast; that is left off here so the meal stays gluten-free and one-surface, but a skillet-toasted bun catches the oil at the bottom of the pan if you want it.

Packing

Dice the onion and cube the peppers at home into one zip bag. Seasoning in a small jar. Sausage stays sealed in the cooler until it goes on the metal. Hash browns can go in frozen and act as an ice block on day one.

Variations

  • No griddle: a 12-inch cast iron pan works, but cook in two batches or everything steams.
  • Swap the sausage for a can of drained black beans and skip the meat.
  • Crack eggs into a cleared corner at the end if this is breakfast.
