Ingredients
| Whole milk powder | 1/3 cup | whole, not skim, or it tastes thin |
|---|---|---|
| Sugar | 3 tbsp | |
| Powdered lemonade mix | 2 tbsp | the unsweetened kind if you can find it |
| Citric acid or a squeeze of lemon juice concentrate | 1/4 tsp | optional, sharpens the sour end |
| Salt | a pinch | |
| Cold water | 350 ml | |
| Ice | as much as you have | car camping only |
Method
- Tip the dry mix into a wide-mouth bottle or a leakproof jar.
- Add about 100 ml of cold water first and shake until the milk powder is smooth. Adding all the water at once leaves lumps that never break up.
- Add the rest of the water, cap it, and shake hard for twenty seconds. It should foam and thicken slightly.
- Drop in ice if you have a cooler. Otherwise sink the bottle in a cold creek for ten minutes.
- Drink it straight from the bottle. Nothing to wash.
The original is sweetened condensed milk whipped with lemon over ice, which is a fridge recipe and a blender recipe at once. Neither travels. Whole milk powder plus sugar rebuilds condensed milk from the dry side, and shaking in a bottle does what the whip did: it aerates and it dissolves.
Order matters more than technique. Milk powder hydrates in a small amount of water and clumps in a large one, so the first shake is a paste, not a drink. The pinch of salt is not for flavor exactly; it keeps the sugar from reading flat once the mix is cold.
Packing
Premix the milk powder, sugar, lemonade mix, citric acid, and salt into one bag per serving at home. Milk powder cakes in humidity, so squeeze the air out and double-bag it on long trips.
Variations
- A tablespoon of instant vanilla pudding mix makes it thicker and closer to a milkshake.
- Swap the lemonade mix for powdered lime or a hibiscus drink packet.
- Use coconut milk powder in place of the milk powder for a dairy-free version.
