Ingredients

| Spice blend | 1 tsp | garlic powder, paprika, onion powder, or a salt-free blackening mix |
Method
- At home, heat the oven to 400F. Brush the mushrooms clean with a dry towel. Do not rinse them; water is the enemy of crisp.
- Tear them into bite-sized pieces or leave small clusters whole. Toss with the oil until every surface looks wet.
- Stir the flour, salt, pepper, and spices together, then toss that through the mushrooms with your hands. Go gently or the caps shred.
- Spread them on a parchment-lined sheet in one layer, no overlap. Overlapping pieces steam instead of crisping.
- Bake 20 to 25 minutes. Flip anything showing pale raw flour and give it another 5 minutes. They are done when they are brown at the edges and crack rather than bend.
- Cool completely on the sheet before bagging. Warm mushrooms sweat and go soft in the bag.
This is a home-prep recipe with no camp step at all, which is the point. Oyster mushrooms are 90 percent water, and the oven drives that off while the thin flour coat and the oil fry the outside dry. What is left is mostly structure: light, crisp, and shelf-stable for a few days without a cooler.
The oil is where the calories are, so do not cut it. Three tablespoons across five ounces of mushrooms sounds like a lot until you remember the mushrooms shrink to about a quarter of their starting volume. Single layer on the sheet matters more than anything else here.
Packing
Cool, then seal in a rigid container or a bag inside a cook pot. They crush like chips. They hold about three days at room temperature, so bake them the day before you leave.
Variations
- A pinch of nutritional yeast in the flour adds savory depth without meat.
- Black trumpets, yellowfoot chanterelles, and crown coral all bake the same way.
- An air fryer does the same job in half the time if you have one.
