Ingredients

Canned chicken breast 3 cans (12 oz drained) drain hard, it goes watery otherwise
Panko or plain breadcrumbs 1 cup
Olive oil 3 tbsp
Marinara sauce 1 cup pouch or jar, whatever survives the drive
Shredded mozzarella 2 cups rides in the cooler
Grated parmesan 1/4 cup the shelf-stable canister is fine here
Refrigerated crescent roll dough 8 oz tube cooler; keep it cold until the lid is on

Method

  1. Build a fire and burn it down to coals. You want a bed under the oven and a shovelful on the lid, roughly 350F.
  2. Drain the chicken and press it dry against the can lid. Toss it in the pot with the breadcrumbs and oil until the crumbs are damp and coated.
  3. Pack that mixture into an even layer across the bottom of a 10-inch dutch oven. Press it down; it should read as one slab, not loose chunks.
  4. Set the oven on coals with the lid on for about 10 minutes, until the bottom crust sets and smells toasted.
  5. Spoon the marinara over the top, then the mozzarella, then the parmesan.
  6. Unroll the crescent dough into a single sheet and stretch it over everything, pinching the seams shut. Trim what hangs over.
  7. Lid on, most of the coals moved to the top. Bake 15 to 20 minutes until the dough is browned through the middle, not just the edges.
  8. Let it sit five minutes before you cut it, or it comes out as soup.

The original is a sheet-pan dinner built on frozen chicken fingers, which is a non-starter anywhere without a freezer. Canned chicken bound with breadcrumbs and oil does the same job: it gives you a firm, browned base that holds sauce instead of dissolving into it. Draining and pressing the chicken matters more than anything else in this recipe.

The dutch oven handles the two-stage bake the oven version needs. Bottom heat first to set the crust, then most of the coals on the lid so the dough browns from above before the cheese underneath breaks. Cheese and dough are the only cooler items, so this is a first- or second-night car camp meal, not a long trip.

Packing

Cans, crumbs, oil, and sauce live in the food bin. Cheese and dough go in the cooler, dough on top where nothing crushes it. Bring a lid lifter and a small shovel for coals.

Variations

  • Frozen breaded chicken fingers work if you have a cooler with real ice: cook them first, then crowd them into the bottom of the oven in place of the crumb slab.
  • No dough? Cover with buttered bread torn into pieces and bake the same way.
  • A handful of dried oregano and garlic powder in the breadcrumbs is worth the half ounce.
