Ingredients
| Kodiak Cakes pancake mix | 3 cups | |

| Powdered whole egg | 6 tbsp | stands in for 3 fresh eggs |
| Dried banana chips | 1 1/2 cups | crushed, or use freeze-dried banana slices |
| Water | about 300 ml | plus 1/2 cup to soften the bananas |
| Oil | 2 tbsp | also for greasing the foil |
| Cinnamon | 1 tsp | |
| Salt | 1/4 tsp |
Method
- Start 20 or so coals. You want them mostly grey before anything goes in the oven.
- Pour 1/2 cup of cold water over the crushed banana chips and let them sit ten minutes. They go from gravel to paste.
- Stir the egg powder into 300 ml of cold water until no dry lumps float. Add the bananas and the oil.
- Add the pancake mix, cinnamon, and salt. Stir just until it comes together. Overmixing makes them tough.
- Line the dutch oven with oiled foil and spread the batter about an inch deep.
- Lid on. Put roughly two thirds of the coals on top and one third underneath. Bake 18 minutes, rotating the oven and the lid a quarter turn every five.
- Done when a twig comes out clean. Lift the foil out, let it cool, and cut into squares.
The original is a home kitchen trick: bake the batter all at once in a muffin tin instead of standing at the stove flipping two pancakes at a time. A dutch oven does the same job with coals, and it lets you feed four people from one vessel and one bake.
Three things had to change for the trail. Fresh bananas became dried banana chips rehydrated in a little water, which gives back the moisture and sweetness they were there for. Fresh eggs became powdered egg, mixed with cold water before the dry goods so it has a chance to dissolve. The mix itself is already shelf-stable and carries most of the protein. Foil in the bottom means the pan comes out clean and the squares lift out whole.
Packing
Mix, egg powder, cinnamon, and salt go in one gallon bag at home. Banana chips ride separately so they stay crisp until you want them soft. Oil in a leakproof bottle.
Variations
- Chocolate chips or dried blueberries stirred in at the end.
- Skip the bake and cook the same batter as pancakes on a greased lid over the same coals.
- Carry syrup in a small squeeze bottle if you want them dipped.
