Ingredients

Graham cracker crumbs 1 1/2 cups crush at home so you are not doing it on a picnic table
Sugar 1/3 cup
Butter 6 tbsp keeps a few days out of the cooler in cool weather
Chocolate chips 2 cups
Mini marshmallows 2 cups

Method

  1. Build a coal bed and get the dutch oven to roughly 350°F. On a 12-inch oven that is about 8 coals under and 17 on the lid.
  2. Melt the butter in the pie tin near the fire, then stir in the crumbs and sugar until every crumb is damp.
  3. Press the mix up the sides and across the bottom of the tin with the back of a spoon. Pack it hard or it will fall apart when you cut it.
  4. Set the tin in the dutch oven. Pour the chocolate chips over the crust and lid it for about 5 minutes, until the chips slump.
  5. Spread the softened chocolate flat, then cover it edge to edge with marshmallows. Lid it again and check every 5 minutes.
  6. Pull it once the marshmallow tops are brown, around 10 minutes. Lift the tin out and let it sit until the crust firms up. A snowbank or a shallow pan of cold water speeds that up.

Cooking this over coals instead of in an oven means the heat comes from two directions and you control each one. Most of the coals go on the lid because marshmallows brown from above; too many underneath and the crust burns before the tops color.

The two-stage bake matters. Chocolate needs to melt and spread before marshmallows go on, or you end up with browned marshmallow sitting on hard chips. Cooling is the other half — the butter in the crust is liquid when it comes off the fire and the whole thing slices cleanly only once that sets.

Packing

Crumbs and sugar go in one bag, chips and marshmallows in another. Butter in a screw-top container. A 12-inch dutch oven, a lid lifter, and a pie tin that fits inside it.

Variations

  • Swap a store-bought graham crust for the crumbs, sugar, and butter if you would rather not press one in the field.
  • A 10-inch dutch oven takes about two-thirds of everything; the heat and timing do not change.
  • Peanut butter chips for half the chocolate, if nobody in camp has an allergy.
