Ingredients
| Sliced bread | 1 slice | day-old and sturdy holds the egg better than fresh soft bread |
|---|---|---|
| Egg | 1 | carried in a hard case, or crack into a bottle at home |
| Butter | 1 tbsp | keeps a day out of the cooler in cool weather |
| Salt, pepper, and whatever else you brought | to taste |
Method
- Melt the butter in a skillet over low heat. Low matters, the bread scorches before the egg sets.
The bread is doing two jobs. It contains the egg so the white does not run across the pan, and it soaks up butter on both sides while the egg cooks, so you get toast and a fried egg from one flip instead of two operations.
This one needs a cooler, so it is a car camping or first morning breakfast. Keep the heat low. A hot pan sets the bottom of the white before the top has any idea what is happening, and the bread turns black while the yolk is still cold.
Packing
Bread goes in a rigid container or it arrives as crumbs. Eggs travel in a plastic egg case, or crack them into a wide-mouth bottle at home and pour one out per slice.
Variations
- Lay a slice of cheese over the top for the last minute and cover the pan.
- Cook it over a grill grate in a cast iron pan if you have a fire going anyway.
- No cooler? Rehydrated powdered egg poured into the hole sets slower but works.
