Ingredients

Eggs 2 carry in a hard egg case or crack into a bottle at home
Bread 2 slices thick-cut holds together better
Bacon 4 strips pre-cooked bacon skips the grease problem entirely
Olive oil 1 tbsp in a dropper bottle
Salt and pepper to taste

Method

  1. Get the griddle or a skillet hot over the grate. Wipe it with oil.
  2. Lay the bacon on one side and let it start rendering.
  3. Tear or press a hole out of the center of each bread slice. Set the centers aside.
  4. Put the bread on the greased side of the griddle. Toast one side, flip it, then crack an egg into each hole.
  5. Cook until the white sets, about three minutes. Flip carefully if you want the yolk firm.
  6. Lay the bacon over the toast and eat. Fry the bread centers in the bacon fat while you wait.

This is the simplest hot breakfast a griddle can produce. Cutting a hole in the bread lets the egg cook flat inside the toast instead of sliding around loose, and the bread soaks up whatever fat is already on the surface. Cook the bacon first so the toast has something to fry in.

The original assumes an already-dirty griddle from the night before and a fair bit of beer. Neither is required. What matters is a hot, greased surface and eggs that made it to camp intact, so carry them in a rigid case and keep the whole thing in the cooler. This is a drive-in breakfast, not a backpacking one.

Packing

Eggs go in a rigid case in the cooler, bread on top of the load so it does not compress. Pre-cooked bacon is shelf-stable until opened and is worth the small premium in camp.

Variations

  • A slice of hard cheese melted on top while the egg sets.
  • Skip the bacon and it becomes vegetarian, though not dairy-free if you add cheese.
  • Sausage patties work if you have them; cook them first and use the fat for the bread.
