Ingredients

Rolled oats 1/2 cup quick oats work, steel cut will not
Fine bulgur wheat 1/3 cup the #1 grind rehydrates without simmering
Instant split pea soup powder 1/3 cup or pea flour plus a bouillon cube
Vegetable bouillon 1 cube
Fried onions 2 tbsp the crispy kind from a can
Olive oil 1 tbsp dropper bottle
Black pepper and smoked paprika 1/2 tsp

Method

  1. Boil 600 ml of water and drop in the bouillon cube. Stir until it dissolves.
  2. Pour in the whole dry bag. Stir immediately or the pea powder clumps.
  3. Give it two minutes at a low boil, stirring so the oats do not scorch on the bottom.
  4. Kill the heat, lid it, and wait five minutes. The bulgur is doing the slow part.
  5. Pour the oil over the top and stir. Crumble the fried onions on last so they stay crisp.

Three cheap bulk grains, each covering a gap in the others. Oats thicken fast and go soft in minutes. Fine bulgur brings chew, so the pot does not turn into wallpaper paste. Split peas carry the protein and the savory weight that oats alone never have.

The fat matters more than it looks. Grains and legumes are almost all carbohydrate, and at 600 ml this is a lot of volume for the calories. The tablespoon of oil is a third of the dinner. Add it off the heat so it does not just cook off into the steam.

Packing

Oats, bulgur, pea powder, and spices go in one bag at home. Onions ride in their own bag or they go soft and lose the point. Oil stays in the bottle.

Variations

  • A foil packet of tuna or a scoop of chicken adds 20 g of protein.
  • Swap the paprika for curry powder and add a spoon of coconut milk powder.
  • Cut the water to 450 ml and it eats like a pilaf instead of a porridge.
