Ingredients
| Dehydrated pinto beans | 1/2 cup | flakes or precooked dried beans, not raw beans |
|---|---|---|
| Instant rice | 1/2 cup | parboiled, the five-minute kind |
| Dried corn | 2 tbsp | |
| Dried bell pepper and onion | 2 tbsp | |
| Taco seasoning | 1 tbsp | check the label if you need it gluten-free |
| Olive oil | 1 tbsp | dropper bottle |
| Salt | a pinch | |
| Lime powder or hot sauce packet | to taste |
Method
- Boil 600 ml of water. Pour about half of it over the beans, corn, pepper, and onion in the pot. Lid on, off the heat, ten minutes.
Dehydrated pinto beans are the whole reason this works. Raw beans need an hour of hard boil and fuel you did not carry. Precooked dried beans come back in ten minutes off a single pour of hot water, which puts them on the same schedule as instant rice.
The order matters more than the ingredients. Beans and dried vegetables go first and get the longer soak, because they are the slowest things in the pot. Rice goes in second with the rest of the water. Oil at the end, since it coats the grains and stops the seasoning from settling into a paste at the bottom.
Packing
Beans, vegetables, and seasoning in one bag. Rice in a second bag, since it goes in later and you want to see what you are doing. Oil rides upright.
Variations
- A foil packet of chicken or a handful of dried beef adds 20 g of protein.
- Crushed corn chips on top give it texture and another 150 calories.
- A hunk of hard cheese stirred in at the end if you are not keeping it dairy-free.
