First-Night Skewers with Couscous

Meat on a stick over the fire, couscous in the pot underneath it. The one meal that justifies driving in with a cooler.

Ingredients

Beef sirloin or pork loin, cut in 1-inch cubes 14 oz cubed and seasoned at home, packed on ice
Olive oil 2 tbsp
Garlic powder 1 tsp
Smoked paprika 1 tsp
Coarse salt 1 tsp
Instant couscous 1 cup
Bouillon powder 1 tsp
Dried onion flakes 1 tbsp
Metal or soaked wood skewers 4

Method

  1. Build the fire early and let it burn down. You want a bed of coals, not flames. Flames char the outside and leave the middle raw.
  2. Thread the cubes onto skewers with a finger of space between them so heat gets all the way around.
  3. Lay the skewers on the grate over the coals. Turn a quarter turn every two minutes, about ten minutes total. Cut one cube open to check.
  4. While the meat cooks, boil 250 ml of water in the pot with the bouillon and onion flakes. Pull it off the heat, stir in the couscous, cover, and leave it five minutes.
  5. Fluff the couscous with a spoon, slide the meat off the skewers into the pot, and pour any oil left on the grate over the top.

This is a day-one meal and it does not pretend otherwise. Fresh meat is the one thing worth carrying on ice, and it only stays safe for the first night out, so cook it before anything else in the cooler starts arguing with you. Everything else here is dry weight that would survive a month.

The couscous is doing more than filling space. It cooks off residual heat rather than sustained flame, which means the pot leaves the fire while the skewers are still on it, and the fat rendering off the meat has somewhere to land. Seasoning the meat at home matters too: salt needs hours to get past the surface, and you will not want to stand around a fire waiting for it.

Packing

Cube and season the meat at home in a zip bag, then freeze it flat. It thaws in the cooler on the drive and doubles as an ice block. Couscous, bouillon, and onion flakes go in one bag together.

Variations

  • Swap couscous for instant polenta or minute rice if you need it gluten-free.
  • No cooler space: use a foil pouch of chicken and skip the skewers entirely.
  • Thread halved bell peppers or onion between the cubes if you are eating the first night anyway.
