Ingredients

Ripe banana 1 brown spots are what you want; green ones stay starchy
Milk chocolate bar 1.5 oz broken into chunks
Marshmallows 1/4 cup minis melt more evenly than the big ones
Heavy-duty foil 1 sheet about 12 inches square

Method

  1. Leave the peel on. Cut the banana lengthwise, most of the way through, so it opens like a book and stays hinged.

Bananas are mostly water and starch, and heat converts a lot of that starch to sugar. That is why a ripe banana goes soft and almost caramel-flavored in the coals while an underripe one just goes warm and chalky. The peel does the real work: it holds the shape, keeps the sugar from scorching, and doubles as the bowl you eat out of.

The foil is not optional. Direct coals will burn the peel through and dump the whole thing into the fire. Wrapped, the banana steams in its own moisture, which is also why this needs no added water. Twelve minutes is the window; much longer and it collapses into pudding.

Packing

Bananas travel in a hard container or they arrive as pulp. Chocolate and marshmallows stay in the food bin; on a warm day put the chocolate in the cooler so it is still in bar shape when you want it.

Variations

  • Peanut butter cups instead of a plain bar. Drops the nut-free claim.
  • A spoonful of instant coffee granules over the chocolate cuts the sweetness.
  • Crushed graham crackers on top after opening, if you want it closer to a s'more.
