Ingredients

Apple 1 medium Honeycrisp, Fuji, or Granny Smith work best
Granola 1/4 cup or a mix of rolled oats and chopped nuts
Raisins 2 tbsp
Chopped nuts 2 tbsp walnuts, pecans, or almonds
Brown sugar 1 tbsp
Ground cinnamon 1/4 tsp
Butter 1 tbsp
Maple syrup 1 tsp optional

Method

  1. Core the apple from the top, scooping out the flesh to create a cavity. Go only halfway down, leaving the bottom and sides intact.
  2. Mix granola, raisins, nuts, brown sugar, cinnamon, and salt in a small bowl.
  3. Stuff the mixture into the apple cavity, packing it gently so it stays in place.
  4. Top with a pat of butter and a drizzle of maple syrup if you're carrying it.
  5. Wrap the apple tightly in foil and place it on a grill grate or near the coals, turning every five minutes.
  6. Cook for 15 to 20 minutes, until the apple is soft when pierced with a fork.

Cooking an apple in foil over fire is straightforward because the apple shell contains everything. The fruit softens as it heats, and the filling stays in place instead of spilling into the coals. Butter melts into the apple, carrying the brown sugar and spices with it.
