Ingredients

Ripe bananas 2 peeled and sliced into coins
Graham crackers 4 sheets broken into rough pieces
Dark chocolate chunks 1/2 cup
Mini marshmallows 1/2 cup
Sliced almonds 1/3 cup
Flaky sea salt a few pinches

Method

  1. Let the fire burn down to steady coals. Flame scorches the outside of the packet before anything inside melts.
  2. Tear four sheets of heavy-duty foil, about a foot each. Double regular foil if that is what you have.
  3. Lay a base of broken graham cracker on each sheet, then banana coins, then chocolate, marshmallows, and almonds. Finish with a pinch of salt.
  4. Fold the foil into a sealed packet with the seam facing up and a little air left inside so steam has somewhere to go.
  5. Set the packets on the coals or a grill grate over them for about 10 minutes. Rotate once with long tongs.
  6. Pull them off and wait a minute before opening. The chocolate is molten and will run everywhere otherwise. Eat straight from the foil.

This is a s’more that stopped needing sticks. The foil traps steam, so the banana goes soft and the chocolate melts into it instead of sliding off a cracker into the fire. Almonds are the structural element — without them the whole packet collapses into sweet mush.

Build the packets right before they go on the coals. Banana sitting on graham cracker for an hour turns the base to paste. Coals, not flame: gentle heat all the way around is the difference between melted and burnt, and foil gives you no warning between the two.

Packing

Crackers go in a rigid container or they arrive as crumbs. Chocolate and bananas ride in the cooler, bananas on top where nothing crushes them. Almonds get measured into a small bag at home.

Variations

  • Peanut butter in place of the almonds, if nobody in camp has a nut issue either way.
  • Swap the graham for shortbread cookies. Sturdier, and they hold up longer under the banana.
