Ingredients
| Flour tortillas | 6, burrito size | corn works but needs warming first or it splits |
|---|---|---|
| Refried beans | 1 can (16 oz) | the glue that holds the filling together |
| Eggs | 8, scrambled at home | |
| Bacon | 8 slices, cooked crisp and chopped | |
| Shredded Mexican-blend cheese | 1 1/2 cups | |
| Salt and hot sauce | to taste | |
| Avocado | 1-2 | optional, carried whole and hard, sliced at camp |
Method
- At home: cook the bacon, scramble the eggs soft, and let both cool fully. Warm filling steams the tortilla and turns it to paste in the cooler.
- Lay each tortilla on a square of heavy foil. Spread beans first, then eggs, bacon, and cheese. Beans go against the tortilla so the wet stuff does not soak through.
- Roll tight, tucking the ends. Wrap the foil like a package: fold the bottom, fold the sides, roll it closed.
- Pack them in the cooler. They keep three days cold, longer frozen.
- At camp, set the foil packets on a grill grate over coals, not flames. Ten to fifteen minutes, turning once. From frozen, give them twenty and keep them further from the heat.
- Open the foil, check the middle is hot, and eat out of the wrapper. Slice avocado over the top if you brought one.
This is assembly work done at the kitchen counter so that camp mornings are one step: put foil on coals, wait. Nothing here needs a pan, a plate, or a spoon at the site, and the wrapper is the dish.
Temperature discipline at home is the whole game. Filling that goes in warm sweats inside the foil and the tortilla goes gummy by day two. Cool everything to room temperature first, keep the beans as the layer against the tortilla, and they reheat clean. Coals rather than open flame — foil against flame scorches the tortilla before the center thaws.
Packing
Wrapped burritos stack flat along the bottom of the cooler, under the drinks. Label the foil with a marker if you made vegetarian ones too. Freeze them solid for a long drive and they double as ice.
Variations
- Swap the bacon for a crumbled sausage or leftover pulled pork.
- Tofu scramble and no cheese makes it vegan; corn tortillas make it gluten-free.
- Add cold roasted potatoes for another 150 calories and a lot more bulk.
