Method
- At home or on the tailgate, stir the mayo and mustard together in a cup.
- Split the slab of rolls horizontally. Spread half the sauce on the cut face of the bottom.
- Layer six cheese slices, then the turkey, then the ham, then the rest of the cheese. Spread the remaining sauce on the underside of the top slab and close it.
- Brush the melted butter over the top crust, then scatter the parmesan and poppy seeds.
- Wrap the whole slab in two layers of heavy-duty foil, sealed at the seams.
- Set the packet on a grate over coals, not flame. Ten minutes, flip, five more. Pull it when the cheese is running out the sides.
- Open the foil away from your face. Let it sit two minutes, then cut into squares.
This is an oven appetizer moved onto coals. The foil packet does what the covered baking dish did: it traps steam so the cheese melts through before the crust burns. A grate over embers gives you the same steady low heat an oven does. Direct flame does not, and the bottom of the slab will char in a couple of minutes if you try.
Assembling at home is the real change. Layering nine things on a picnic table is a chore, and cold cuts sitting out while you do it is how a lunch goes wrong. Cheese on both the top and bottom of the meat is not redundant either, it seals the bread against the mustard and mayo so the rolls hold up in the cooler.
Packing
Build the whole slab at home, wrap it in foil, and lay it flat in the cooler. Meat and cheese need to stay cold, so this is a day-one or day-two meal. Carry the butter, parmesan, and poppy seeds in a small tin and add them at camp so the crust does not go soggy in transit.
Variations
- No cooler: swap the deli meat for a foil pouch of chicken and use a shelf-stable processed cheese slice. It travels for days.
- Skip the meat entirely and the cheese slab still works as a hot lunch.
- A layer of sliced pickles cuts the fat, and they come in their own brine so they keep.
