Ingredients

Sandwich bread 2 slices a dense sourdough or rye holds together better than soft white
Chocolate hazelnut spread 2 tbsp single-serve squeeze packets travel cleanest
Banana 1/2 slightly green at the trailhead, ripe by night two
Butter 1 tbsp ghee if it will be warm out

Method

  1. Spread the hazelnut spread on the facing sides of both slices.
  2. Slice the banana into coins and lay them across one slice. Close the sandwich.
  3. Melt about half the butter in the pan over low to medium heat. High heat burns the outside before the middle warms.
  4. Butter the top of the sandwich, then set it in the pan buttered side up. Cook until the underside is brown, three minutes or so.
  5. Flip it, add the rest of the butter if the pan is dry, and brown the second side.
  6. Take it off the heat when both sides are golden and the filling has gone soft. It is hot inside, so give it a minute.

This is a camp dessert that needs no water and no second pot. The heat is the whole point: warm hazelnut spread turns to sauce and the banana goes soft, which is a different thing entirely from the same sandwich eaten cold.

Low heat matters more than technique. Butter and sugar both scorch fast, and a hot pan gives you a black crust over a cold middle. If you are only cooking one, invert your pot over the pan as a lid and the top slice warms while the bottom browns. The banana is the one perishable here, so this is a first-night recipe unless you start with fruit that is still firm.

Packing

Assemble it at home, wrap in foil, and it goes straight into the pan at camp. Otherwise carry the bread flat in the top of your pack and the banana somewhere it will not get crushed.

Variations

  • A toastie iron works too. Butter the outside of both slices instead of one.
  • Swap the banana for a sliced pear or a handful of dried cherries.
  • Peanut butter under the chocolate spread adds protein and keeps it from sliding out.
