Ingredients

Instant vanilla pudding mix 1/2 cup stands in for the ice cream base
Whole milk powder 1/3 cup
Freeze-dried mixed berries 1 cup forest berries if you can find them
Shortbread cookies 6 small sandkake or any butter cookie
Cookie crumbs 1/2 cup crushed graham or shortbread
Sugar 1 tbsp skip if the pudding mix is sweetened

Method

  1. Set aside two cookies per person and a small handful of whole berries for the top.
  2. Shake the pudding mix and milk powder together in a wide-mouth jar or freezer bag.
  3. Add 120 ml of cold water. Shake hard for thirty seconds, then let it sit five minutes to set up.
  4. Stir in the cookie crumbs and the rest of the berries. The berries pull water out of the mix and stiffen it.
  5. Spoon it over the reserved cookies and scatter the whole berries on top. Eat now, before the cookies go soft.

The original is a way to use up melting ice cream. Nobody has melting ice cream on a trip, so the cold part is gone and what stays is the texture: something thick and cold, fruit, and crunch. Instant pudding and milk powder do the thick-and-cold job with 120 ml of water and no stove.

Freeze-dried berries are load-bearing here, not decoration. They soak up free water as they rehydrate, which is what keeps the mix from sliding into soup. Add them last and eat it fast, because the cookie crumbs are on the same clock going the other way.

Packing

Pudding mix, milk powder, and sugar go in one bag. Crumbs in a second. Berries and whole cookies in a rigid container or they turn to dust in your pack.

Variations

  • A tablespoon of instant coffee or cocoa in the dry mix changes the whole thing.
  • Trade the milk powder for coconut milk powder to make it dairy-free.
