Ingredients

Bulgur 1/4 cup fine or medium grind rehydrates fastest
Dried apples 2 tbsp diced small so they soften in time
Golden raisins 2 tbsp
Powdered milk 1 tbsp
Cinnamon 1/2 tsp
Nutmeg 1 pinch
Fine sea salt 1/8 tsp
Granulated honey 1 tbsp or one packet of liquid honey

Method

  1. Boil 120 ml of water in the pot.
  2. Dump in the dry mix and stir until nothing is sitting dry on top.
  3. Lid on, stove off. Fifteen minutes. Wrap the pot in a jacket or sit it in a cozy if it is cold out.
  4. Stir again before eating. If you carried liquid honey, squeeze it in now.

Bulgur is already parboiled, so it does not need a real simmer — only hot water and time. That is the whole trick. One boil, then fifteen minutes of sitting while you pack up, and the grain finishes on stored heat instead of fuel. It stays chewy rather than going to porridge, which is either the point or the dealbreaker depending on how you feel about oatmeal.

The dried fruit does double duty: it rehydrates alongside the grain and pulls the sugar through the whole pot instead of leaving a sweet layer on top. Powdered milk covers the dairy without a cooler. Granulated honey is the easier carry — liquid honey goes in at the end, since stirring it into boiling water just glues it to the pot.

Packing

Everything dry goes in one pint freezer bag at home. A honey packet rides loose in the same bag so it does not get stirred in early.

Variations

  • Swap the honey for maple sugar and the dry milk for coconut or soy milk powder to make it vegan.
  • Dried cranberries or chopped dates work in place of the raisins.
  • A spoon of oil or nut butter pushes it past 500 calories if you need the weight to earn more.
