Ingredients
| Instant brown rice | 3/4 cup | the parboiled kind that rehydrates in ten minutes |

| Dried bell pepper flakes | 1/4 cup | |
| Dried minced onion | 2 tbsp | |
| Garlic powder | 1 tsp | |
| Chili powder | 1 1/2 tsp | |
| Olive oil | 1 tbsp | dropper bottle |
| Salt and pepper | to taste |
Method
- Boil 450 ml of water. Dump in the rice, peppers, onion, garlic powder, and chili powder.
- Stir once, cover, and pull it off the flame. Let it sit ten minutes.
- Open the pot. If it looks dry, add a splash of water. Stir in the beans.
- Put it back on low heat for two minutes, just long enough to warm the beans through.
- Kill the heat, pour the oil over, salt and pepper, stir.
The original is a boat-galley dish: fresh onion, fresh peppers, rice cooked in a second pot. On trail that becomes one pot and dried aromatics. Dried pepper and onion rehydrate in the same water the rice drinks, so nothing gets sauteed and nothing gets drained.
Beans go in last and off the boil. They are already cooked, and hammering them in a rolling pot turns them to paste. The oil at the end is not optional either. Rice and beans on their own are a lot of bulk for the calories, and a tablespoon of oil buys 120 of them for almost no weight.
Packing
Rice, peppers, onion, and spices go in one bag as a single premix. Beans ride separately; a foil pouch is heavier but needs no water, bean flakes are lighter but drink another 100 ml.
Variations
- Bean flakes instead of the pouch cut about four ounces of carry weight.
- A squeeze of lime powder or a packet of hot sauce at the end wakes the whole thing up.
- Add a handful of corn nuts on top for crunch and another 150 calories.
