Ingredients

Dehydrated mixed vegetables 3/4 cup carrot, green bean, sweet corn, tomato; cut small before drying
Instant black bean flakes 1/3 cup the refried kind, not whole dried beans
Instant mashed potato flakes 3 tbsp
Vegetable bouillon 1 cube or 1 tsp powder check the label if you need it gluten-free
Smoked paprika, garlic powder, black pepper 1 tsp total
Olive oil 1 tbsp dropper bottle
Dried sweet potato slices 1/4 cup optional, break into chips before packing

Method

  1. Boil 600 ml of water. Drop in the dried vegetables, sweet potato, and bouillon.
  2. Simmer eight minutes on a low flame. Stir now and then so nothing welds to the pot.
  3. Kill the heat. Stir in the bean flakes and let it sit two minutes covered.
  4. Add potato flakes a spoonful at a time until it holds a spoon upright, then the spices and the oil.

The source here was a garden-planning chart, not a recipe: how many carrot, bean, corn, tomato, and sweet potato plants feed one person for a year. That is a pantry problem, and a pantry that size ends up in a dehydrator. This is what the dried end of that harvest turns into on a stove.

Dried vegetables need real simmer time, not a soak. Eight minutes gets them tender; four leaves you chewing carrot gravel. The bean flakes and potato flakes go in last, off the heat, because they thicken on contact and will scorch if the flame is still on. They also do the work of turning a thin vegetable broth into something with enough body and fat to count as dinner.

Packing

Everything dry goes in one bag except the oil. Sweet potato chips are sharp and will puncture a thin bag, so double it or use a heavier one.

Variations

  • Swap the bean flakes for a foil pouch of chicken if you want the protein without the fiber load.
  • A squeeze of lime or a splash of vinegar at the end wakes up the whole pot.
